Panorama
Indian filter coffee is a specialty coffee prepared by percolating finely ground coffee powder in a traditional Indian filter, then combining the resulting infusion with frothed and heated milk.
Also commonly called “Kaapi” or “Meter Coffee” or “Madras Filter Coffee”
History
It’s a fascinating tale of how South Indian filter coffee came to be.
A well-known Sufi saint from Karnataka state named Baba Budan is said to have been to Mecca in the 16th century. He sneaked seven coffee beans from the Yemeni port of Mocha into his clothes in order to produce coffee at home. After arriving at his house, he planted the beans on the Chandragiri Hills’ slopes in the Chickmagaluru area.
Strains
The beans are often combined with roasted chicory after being medium-roasted and coarsely crushed. The final coffee powder composition normally consists of equal parts of standard washed Arabica beans and Peaberry beans with between 10% and 30% chicory added, giving the brewed coffee a distinctive fragrance, thickness, and colour.
